Bhapa Sandesh Cake  

Pastry chef Shreya Agarwala (@ohcheatday) took to Instagram to share a recipe for Bhapa Sandesh Cake that is delicious, high in protein, and perfect for the Janmashtami celebration! 

Ingredients

2 litre Milk Lemon juice Powdered sugar or jaggery Powdered green cardamom Saffron strands Chopped roasted pistachios & almonds 

Bhapa Sandesh Cake Recipe

1. Start by curdling full-fat milk until the milk solid separates. Use a cotton cloth over the strainer to separate them. Let it sit for a while & cool down completely. 2. In the meantime, soak some saffron strands in 2-3 tbsp milk. 

Make The Batter

3. Mash the chenna well until smooth and then transfer to a grinder jar with powdered sugar, saffron-infused milk and green cardamom powder. 4. Blitz it with 2-3 sec intervals until you get a smooth consistency.

Follow These Steps

5. Take a springform pan or loose bottom tin and sprinkle some saffron strands and chopped nuts. 6. Pour in the batter and spread it evenly. 

Time For Cooking 

7. Take a vessel, and add a stand & some water to it. 8. Place the cake tin on the stand and let it steam for 20-25 min on medium flame.

9. Insert a skewer to make sure the cake is cooked well. 10. Remove the cake tin from the vessel and let it cool down. Once it cools down, place it in the refrigerator for 2 hours to set completely.
