3/4th cup of leftover rice 1/2 cup of dahi 1 tsp of mustard seeds 1 tsp of urad dal 7-8 curry leaves Salt & Pepper to taste Pomegranate + peanuts to garnish

First, mix leftover rice or a day-old white rice with curd. Season with salt and pepper. Keep this aside.

Then, heat ghee in a pan and roast urad dal. Add mustard seeds, curry leaves and green chillies.

Add this tadka over the curd rice and mix well.

Heat ghee in a non-stick pan and spread the curd rice over the pan in a thin even layer . Make holes to let out steam.

Cook this on medium heat till the rice turns crispy on the bottom. Flip it over, garnish with peanuts and pomegranates. Your Crispy Dahi Chawal is ready!
