In a large bowl, mix together the mutton mince, onion, garlic, ginger, garam masala, red chili powder, coriander powder, yoghurt, and salt. Cover and refrigerate for 30 minutes to allow the flavours to meld.

Divide the mixture into lemon-sized balls and flatten them slightly to form kebab shapes.

Thread the kebabs onto skewers, making sure to pack them tightly together.

Pre-heat the grill or grill pan over high heat and lightly oil the grates.

Grill the kebabs for 8-10 minutes, turning occasionally until cooked through and lightly charred on the outside.
