Chef Saloni Kukreja shared a recipe for Eggless Suji Chocolate Cake that is perfect for all your sweet cravings.
½ cup suji/rava/semolina 1 cup maida ¼ cup cocoa 1 tsp baking powder ¼ tsp baking soda ¼ tsp salt ¾ cup milk ¾ cup sugar 6 tbsp oil ¼ cup curd Vanilla Essence ½ cup melted chocolate 2 tbsp coconut oil/any neutral oil Sea salt 2 tbsp chopped roasted almonds
1. Preheat the oven to 180°C. 2. In the meantime, mix suji, curd, and half the milk in a bowl. 3. Set it aside for 15-20 mins.
4. In another bowl, mix caster sugar with some oil and vanilla essence. 5. Now, add the suji mixture, along with the remaining milk. 6. Give it all a good mix.
7. Next, sift in the dry ingredients, flour, cocoa powder, salt, baking powder & baking soda, into the wet mix 8. Gently, cut & fold the batter but do not over mix.
9. Transfer the batter to a greased & lined dish and bake for 30-35 mins, or until a skewer inserted comes out clean.
10. For the chocolate glaze, combine melted chocolate with some oil along with a pinch of salt & roasted almonds. 11. Mix well & keep aside for later.
12. Once your cake is baked, allow it to cool down completely. 13. Pour chocolate glaze over the cake. 14. Place it in the refrigerator until the chocolate hardens. 15. Slice in and enjoy!
