1 kg of raw mango 1/2 cup of yellow mustard seeds 10-12 cloves 1 tbsp of whole peppercorns 1 tbsp of saunf 1 tbsp of methi seeds 1/8 cup of red chilli powder 2 tbsp of kalonji 2 tbsp of coriander powder 1 cup of oil 5-6 whole garlic cloves 2 tbsp of ginger paste Salt to taste 1/4 cup of mustard oil

First, wash the mangoes and cut them into chunks. Remove the cores and keep aside.

Coarsely blitz the yellow mustards seeds and dry roast the cloves, saunf, methi and peppercorns. Then blitz the roasted spice.

In a large bowl, add the blitzed spice powder, blitzed mustard seed powder, kalonji, coriander powder and red chilli powder.

In an pan, add oil and roast the garlic cloves till they turn golden. Add the garlic to the masalas with ginger paste. Let it rest.

Then, add the chopped raw mangoes and salt. Mix and pour hot mustard oil. Store and sun-dry for 4-5 days. Your Mango Pickle is ready.
