1. Take the eggplants and cut them into small round pieces. 2. Put the sliced eggplants into water and prepare the masala in the meantime.
3. In a separate bowl, take some salt, red chilli powder, turmeric powder, and coriander powder and add some mustard oil to it. 4. Mix it all together and dunk the eggplant slices into the masala mix.
5. Coat the slices well with the masala. 6. In a pan, roast the slices in some mustard oil for a couple of minutes.
7. Take them off the heat and prepare the tadka for your raita. 8. In some mustard oil, add a little hing, mustard seeds, some dried red chillies, and curry leaves and your tadka is ready.
9. To assemble the raita, take yoghurt in a big bowl and add the roasted eggplants and tadka to it. 10. Top it with some coriander and your dish is ready!
