Kimchi is always a good idea and we found this Indianised version of the popular Korean side dish that you just cannot miss!

Chef Kunal Kapur shared a Veg Kimchi recipe that you can make at home with ingredients that are available at home.
25-30 dried red chillies 8 garlic cloves 5 sliced ginger 400 g Napa Cabbage 1 radish 4 carrots 4 spring onions Salt Vinegar ¾ cup tomato ketchup Sugar 2 tbsp rice flour Soya sauce Sesame seeds

1. Take the dried red chillies, garlic cloves, and sliced ginger in a pan with some water and let them cook. 2. Take it off the heat, and transfer it to a blender and add ¾ cup of vinegar and tomato ketchup, and 1 tbsp of sugar to it. 3. Blend it all together.
4. Chop the cabbage, radish, carrots, and spring onions in the shape of your choice and place it in a large vessel. 5. Add 2 tbsp of salt to the veggies and toss it well. 6. Let it sit for a few minutes and then wash it with chilled water.
7. Take ½ cup of water in a pan, add 2 tbsp of rice flour to it, and cook it for a few minutes to make a slurry.
8. Add the freshly prepared chilli paste to the chopped veggies along with tbsp soya sauce & toasted sesame seeds.
9. Now, add in the water slurry and give it a good toss!
And that’s it! Your vegetarian kimchi is ready to be served and enjoyed!
