Desserts with seasonal fruits taste amazing, and Chef Aruna Vijay shared the recipe for Muskmelon Payesh, and here’s how you can make it at home.
For Musk Melon Layer - 1 medium musk melon 2 tbsp sugar For Chhena - 1 litre milk 2 tbsp vinegar 2 tbsp water For Payesh Base - ½ litre milk 1 tsp cardamom powder Pinch of saffron 4 tbsp sugar

1. Scoop the melon into pieces. 2. Mix with sugar and refrigerate.
3. To make chhena, boil 1 litre of milk. 4. Add vinegar and water, and mix gradually to curdle. 5. Once it curdles, strain, rinse, and squeeze out excess water. 6. Put under pressure of a weight for 15–20 mins.
7. To make payesh, boil ½ litre milk in a pan, with sugar, saffron, and cardamom. 8. Let it reduce slightly.
9. Add chhena and mix well. 10. Continue cooking for 5-7 mins.
11. Add chilled musk melon & mix gently. 12. Turn off heat.
13. Refrigerate for 5–6 hours. 14. Garnish with pistachios, & serve cold.
