Karan Gokani shared a recipe for Seeni Sambol or caramelised onion relish, a Sri Lankan recipe.

-2 tbsp of oil -1 Cinnamon stick -4 cloves -4 green cardamom. -10-12 curry leaves -2 red onions, sliced -1 tsp red chilli flakes -1 tsp tamarind paste -1 tsp sugar -1 tsp fish sauce or Maldive fish flakes -Lime or lemon juice, to taste -Salt, to taste

First, heat oil in a pan over medium heat. Once the oil becomes hot, add the whole spices and curry leaves.

Then, add sliced onions with a pinch of salt. Keep cooking the onions till they caramelise for 10 to 15 minutes.

Next, sprinkle chilli flakes and mix well. Also, add sugar, fish sauce, Maldive fish flakes and tamarind paste.

Then, go and adjust the seasoning with lemon juice, lime, salt and sugar.

Let the onions cook well and be coated with the masala. Serve your Seeni Sambol warm.
