-3 cups cabbage, thinly sliced -1 cup spring onion greens, chopped -3 green chilies + 2 cloves of garlic, -ground to a paste 1/3 cup coconut, grated (fresh/ frozen) 1/2 tsp turmeric powder 1/4 tsp red chili powder 3/4th tsp coriander powder 1/4 tsp cumin powder 1/2 tsp sugar Pinch of heeng Salt, to taste 1/2 cup thick coconut milk 1 Tbsp rice flour 1/4 cup besan Oil for frying (around 1.5 Tbsp)

In a large bowl, mix together cabbage, spring onions, green chili-garlic paste, coconut, turmeric, red chili powder, coriander powder, cumin powder, sugar, heeng, and salt.

Add the coconut milk and mix well.

Add the rice flour and besan, and mix everything until a thick batter forms.

Heat oil in a cast iron or ceramic pan. Ladle the batter into the pan and spread it evenly. Cover and cook on low heat for 8-10 minutes.

Uncover the pan, place a large plate on top, and flip the Bhanole. Add more oil to the pan and slide the uncooked side in. Tuck in the edges and cook for 3-4 minutes without a lid.

Slide the Bhanole out of the pan, let it cool slightly, cut into triangles or batons, and serve with your favorite chutney or ketchup.
