Gucchi mushrooms are known as one of the costliest mushrooms worldwide. If you still have not tried these rare mushrooms, follow Chef Saransh Goila's recipe for Gucchi Pulao.

• 50g gucchi mushrooms • 3 tsp ghee • 1/2 tsp jeera • 1/2 tsp shahi jeera • 1/2 tsp saunf • 1 inch cinnamon stick • 1 star anise • 1 black cardamom • 3 green cardamoms • 1 bay leaf • 2 onions (sliced) • 1/2 tbsp ginger garlic paste • Salt • 1 cup Basmati rice • 1 tsp soaked saffron

• Take a bowl full of water and soak these mushrooms.

• Add ghee to a kadhai and temper jeera, shahi jeera, saunf, cinnamon, star anise, black cardamom, green cardamoms, and bay leaf.

• Next, add sliced onions to the spices and saute till translucent. Add ginger garlic paste and salt and cook for some time.

• Once the onions turn golden brown, add mushrooms and soaked rice.

• Pour leftover mushroom water, salt, and saffron, and cook for at least 15 minutes till rice is boiled and cooked perfectly.
