Assorted mushrooms chopped, rice vinegar, soy sauce, salt, your choice of veggies chopped, ginger, garlic, sesame oil and vegetable oil.

Prepare the mushrooms by cleaning them with a damp paper towel and slicing/tearing into bite-sized pieces.

In a small bowl, make the sauce by whisking together the soy sauce, rice vinegar, and sesame oil.

 Heat the vegetable oil in a large skillet or wok over high heat. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.

Add the mushrooms and veggies to the pan in a single layer. Allow to sear for 1 minute before stirring.

Continue stir-frying the mushrooms for 3-4 minutes until they start to brown and shrink down.

Pour in the sauce and toss everything together to coat the mushrooms evenly. Let cook for 1 more minute.
