1 large onion - 2 large ripe tomatoes - 4 to 5 spicy chilies (optional) - 3 eggs - olive oil - liquid cheese
- salt & pepper - 1 tsp cumin powder - 1 tsp coriander powder - 1 tsp paprika - 1 tbsp tomato puree
Chop the mentioned veggies.
Sauté the onion until it turns golden brown.
Stir in the tomatoes and season with salt, pepper, cumin, coriander, paprika, tomato paste, and your preferred spices.
Simmer the tomatoes on low heat until they are mushy.
Turn off the heat and crack the eggs into the mixture. Mix thoroughly and add a splash of water.
Turn the heat back on low and spread the cheese on top.
