- 2 large zucchinis -1 large carrot -1 medium onion -1 tbsp of minced ginger -1/4 cup of fresh herbs -1/4 cup of gram flour or besan -2 tbsp of flaxseed powder -1 tsp of baking powder -1 tsp of Italian seasonings - Salt as per taste

First, grate zucchini and carrot. Ad salt and squeeze out all the water from the grated veggies.

For binding, add besan, chopped onions, and fresh herbs.

Instead of egg, add flaxseed to the mixture for protein. Add baking powder.

Shape the mixture into small patties.

Then, cook them on a pan with little oil till they turn golden brown and crispy on both sides. Your Zucchini Fritters are ready!
