This is a Moroccan Salad, which is made by cooking eggplants and tomatoes.
It’s an Indian dish made by mashing roasted eggplants and then sautéing it with some more ingredients and spices.

For Zalouk, eggplant is peeled and cut in cubes before being cooked with tomatoes. While Baingan Bharta, uses roasted eggplants!
