Traditionally made in ghee, Modur Pulao is usually savoured with a spicy curry dish on the side. Basmati rice mixed with milk or cream makes this dish special enough for important occasions or festivals. To make it more indulgent, it is often topped with some saffron petals.

Many Indian cuisines have their own versions of sweet rice dishes, but this one from Kashmir stands out uniquely. A flavourful combination of both bold spices and sweet elements makes this dish immensely aromatic. Here’s How You Can Make This Kashmiri Delicacy

To make this amazing dish at home, collect all the required ingredients listed below: :

Follow these steps for a flavourful plate of Modur Pulao: 

  1. Take some basmati rice, wash it thoroughly, and set it aside to soak for at least 30 minutes.
  2. Once they are soaked properly, drain the water.
  3. In a big vessel, pour some milk and add some salt to it. Add the soaked rice to that vessel as well and cook it until it’s 3/4th done.
  4. Take a pan and heat some ghee in it. 
  5. Roast the chopped nuts and spices in hot ghee until they are golden.
  6. Once they are nicely roasted, add them to the rice.
  7. Take some hot milk in a small bowl and soak a few strands of saffron in it.
  8. Next, add the saffron milk to the pot of rice.
  9. Lastly, add sugar to the pot and mix it well.
  10. Keep it covered on the stove until it’s properly cooked. When done, keep the pot aside for 10 minutes.
