Feast Your Senses With This Recipe
Ingredients:
- 2 Purple Sweet Potatoes (or Ube)
- 1 tablespoon Mustard Oil for cooking
- 2 Chillies
- 4 to 5 Cloves of Garlic
- 1 tsp Raw Onion
- 1/2 Onion, sliced
- Salt to taste
- 1 tsp Raw Mustard oil
- 1 Small Green Chilli
- 1 tbsp Coriander
- Lime Juice to taste
Method:
- Peel and chop the sweet potatoes into small cubes. Boil or steam them until just tender. Be cautious not to overcook to maintain a desirable texture.
- In a pan, heat mustard oil. Add chopped chillies and crushed garlic and sauté until aromatic.
- Add the raw onion and continue sautéing until it becomes translucent.
- Transfer the boiled sweet potatoes to the pan. Mash them using a spatula or the back of a spoon, incorporating them with the sautéed mixture.
- Add salt to taste, raw mustard oil, sliced onions, finely chopped green chilli, and coriander. Mix everything thoroughly.
- Squeeze lime juice over the mixture for a burst of freshness.
- This purple aloo bhorta pairs exceptionally well with hot dal and rice. The contrasting flavours and textures create a satisfying meal.
