Ingredients:

  • 2 Purple Sweet Potatoes (or Ube)
  • 1 tablespoon Mustard Oil for cooking
  • 2 Chillies
  • 4 to 5 Cloves of Garlic
  • 1 tsp Raw Onion
  • 1/2 Onion, sliced
  • Salt to taste
  • 1 tsp Raw Mustard oil
  • 1 Small Green Chilli
  • 1 tbsp Coriander
  • Lime Juice to taste

Method:

  1. Peel and chop the sweet potatoes into small cubes. Boil or steam them until just tender. Be cautious not to overcook to maintain a desirable texture.
  2. In a pan, heat mustard oil. Add chopped chillies and crushed garlic and sauté until aromatic.
  3. Add the raw onion and continue sautéing until it becomes translucent.
  4. Transfer the boiled sweet potatoes to the pan. Mash them using a spatula or the back of a spoon, incorporating them with the sautéed mixture.
  5. Add salt to taste, raw mustard oil, sliced onions, finely chopped green chilli, and coriander. Mix everything thoroughly.
  6. Squeeze lime juice over the mixture for a burst of freshness.
  7. This purple aloo bhorta pairs exceptionally well with hot dal and rice. The contrasting flavours and textures create a satisfying meal.
