In his latest post, he spoke about Shahi Parcha Kebab, a meaty and flavourful dish that will transport you straight to the 18th century!

He shared that the delicacy has been part of Lucknow’s culinary landscape from the era of Badshah Muhammad Ali Shah, the 18th-century Nawab of Awadh. Taqi Abbas calls it a piece of history and “a culinary masterpiece that has travelled through time”. The dish is loaded with the finest of spices and carries the legacy of Lucknow in each bite!

How Is This Dish Prepared?

Perfectly capturing Nawabi grandeur and a culture that celebrates the art of food, Shahi Parcha Kebab is something you cannot miss on your next Lucknow trip. Taqi Abbas shared that to make these kebabs, parche (meat) is thinly sliced. It is then marinated with the finest tenderised spices for some time. Then, the meat is cooked with aromatic spices, nuts, and malai (rich cream). Everything is mixed well and a delicate smoking process with rose petals is induced in the Shahi Parcha Kebab. The kebabs are then slow-cooked until tender. People usually enjoy them with paratha or naan.
