Zafran’s seasonal menu will take you on a culinary journey through India. Savor distinctive versions of this signature dish, each reflecting the flavors, spices, and herbs synonymous with the region they originated from. Begin your sojourn in the Southern state of Kerala with the Malabar Biryani. The more discerning palate will appreciate the coastal influences of coconut and special seasonings that give this fare a certain mystique.

Work your way East to far off West Bengal and try the Kolkata Biryani. Having evolved from the traditional Lucknow-style biryani, this dish was tweaked with an additional ingredient -the humble and much-loved potato. Rich in history it is now a staple in the city of Kolkata, which was once ruled by Nawabs (Mughal princes).

From Hyderabad, the land of Nawabs, comes the Rampuri Gosht Biryani. This delicacy is integral to Rampuri cuisine – a confluence of numerous culinary arts taken from Awadhi, Mughlai and Afghani sources and features succulent pieces of lamb, tomato puree, caramelized onions, and mint and ghee rice infused with spices.

The final chapter in Biryani Tales is given to the northern Indian mint drenched Murgh Pudina Biryani, a Delhi-style chicken and rice blend that is robust and heavy on flavors. All the biryanis are served with raita, a condiment made of mildly spiced yoghurt.
