Those suffering from prediabetes need to manage their blood sugar. More often than not, skipping rice is seen as an appropriate measure to control blood sugar levels. But a food content creator has revealed through his latest reel that eating frozen rice could control blood sugar. Here’s more to it.

Food Vlogger Shares Frozen Rice Helped Control His Prediabetes

Michael Tao, a food content creator on Instagram revealed a hack that helped him manage his prediabetes. What’s the hack? It’s “cooking, cooling and even freezing rice. Michael goes on to explain that when one cooks rice, the heat makes the starch molecules absorb water and swell. This inturn makes the rice soft and easy to digest.

But when this rice is cooked, cooled and frozen, the starch molecules reorganise into a crystalline structure. Michael said this is called resistant starch. This slows down digestion which means it prevents a blood sugar spike. So, all you need to do is remove the rice from the freezer and heat it in a microwave.

The content creator revealed eating this frozen rice or resistant starch helped him manage his prediabetes. In his opinion, heating frozen rice is not only convenient for meal prep, but also turns some of the starch into resistant starch.

Many commenters vouched for this method of eating rice. An Instagrammer said they suffered from reactive hypoglycemia and the person prefers to eat frozen rice with her Korean dish to manage her symptoms. Others thanked him for this tip to manage their prediabetes.

Some people raised concerns about using a microwave and called it unhealthy. Few commenters stated that people suffering from prediabetes or diabetes shouldn’t be eating rice in the first place.

Nutritionist Says Leftover Rice & Potatoes Are Healthy

Meanwhile, nutritionist Pooja Makhija in her Instagram post in 2022, also endorsed storing leftover cooked rice in the fridge and consuming it the next day for low glycemic index. The conversion of digestible starch into resistant starch by placing cooked rice and potato in the fridge makes the dish healthy, she recommends.
