How To Make This Smashed Cucumber Salad At Home?
Ingredients
Four medium cucumbers
One tsp Salt
Two tbsp mustard sauce or Kasundi
One Medium Lemon
Two tbsp Olive Oil
One Handful of chopped spring onions
Two tbsp oil
Two tsp chopped garlic
One tsp chilli flakes
One cup of thick curd
Half tsp black salt
One tsp Roasted cumin
Handful of chopped coriander
How To Make The Salad:
Step 1
Smash the cucumbers using a rolling pin or any other heavy object. Ensure that you don’t crush it and make a paste of it. The pieces should be bite-sized and chunky.
Step 2
Pull apart any pieces that may be too big with your hands.
Step 3
Add salt to the cucumber.
Step 4
In a bowl, mix Kasundi, lemon juice, olive oil, chopped spring onions, and mix.
Step 5
In a pan, heat oil, and add garlic. Fry until brown. Add chilli flake.
Step 6
Mix this chilli oil with thick curd. Add black salt, salt, and crushed roasted cumin and coriander. Mix it all well.
Step 7
Add Kasundi to the cucumber and mix them.
Step 8
Plate the yoghurt and top the mustard cucumbers.
Your salad is ready!
