Chef Sanjeev Kapoor celebrated his birthday on April 10. Many of his friends and contemporaries took to social media to wish him and share their sweet memories together as well. Chef Saransh Goila also took the moment to wish his idol and friend a happy birthday and even shared a recipe for Shaam Savera, one of the first dishes that Chef Sanjeev Kapoor made on the iconic show Khana Khazana.
Saransh Goila Recreates Chef Sanjeev Kapoor’s ‘Shaam Savera’

Chef Saransh Goila took to Instagram to wish “legend and guru” Sanjeev Kapoor on his birthday. In the post, he shared the recipe that the birthday boy made more than 30 years ago on his first show Khana Khazana. In a very sweet post, Saransh said, “Over the years from being my idol to becoming my mentor and also my family ❤️ I have seen how incredibly generous and loving he is as a person. Aaj ka jaam, Shaam Savera ke naam and yes khane main namak swaad anusaar dalega, chef 🫡”
In a voice-over in the video, Chef Saransh added bits of Sanjeev Kapoor sharing how the iconic Shaam Savera dish came into existence. “Shaam Savera pheli dish thi jo maine TV pe banai thi, Khana Khazana ka phela episode jo air hua, uski pheli recipe thi yeah. Naye tarah ka palak paneer ki dish thi, usse makhani gravy ke sath banaya, ek naye style se. Yeah nahi pata thi ki itna zyada impact karegi yeah dish,” he said.

Here’s How You Can Recreate This Iconic Dish At Home!
Now, if you’re tempted to make Sanjeev Kapoor’s Shaam Savera at home, then here’s the complete recipe for you, thanks to chef Saransh Goila.
Ingredients
2 bundles of spinach
250g crumbled paneer
Oil
Jeera
Chopped garlic
Chopped ginger
2 chopped green chilli
Salt
Coriander powder
Red chilli powder
Turmeric powder
Kasuri methi
Garam masala powder
Black pepper powder
¼ cup roasted besan
¼ cup cashew powder
Handful of cashews
2 diced onions
5 diced tomatoes
Butter
Honey
2 tbsp fresh cream
Sanjeev Kapoor’s Shaam Savera Recipe
1. Blanch the spinach and blend them to make a thick paste.
2. In a pan, take 1 tbsp oil, and add 1 tsp jeera, 1 tsp chopped garlic, ½ inch chopped ginger, and 1 chopped green chilli and saute till fragrant.
3. Then, add the palak paste, along with some salt, 1 tsp coriander powder, and ½ tsp garam masala powder. Mix it well.
4. Next, add roasted besan and cashew powder to the pan, and cook until thickened. Take it off the heat.
5. For the gravy, take 1 tbsp oil in a pan and add 1 tsp Jeera, ½-inch cinnamon stick, 1 bay leaf, few black peppercorns, 3 green cardamom, 1 black cardamom, 1 tsp chopped garlic, 1-inch chopped ginger, 1 chopped green chilli.
6. Next add diced onions and tomatoes with 1 tsp coriander powder, 1 tsp red chilli powder, ¼ tsp turmeric powder, ¼ tsp garam masala powder and salt.
7. Also, add a handful of cashews and 1 tsp kasuri methi, and mix well.
8. Add 1 cup water and let the gravy cook for ½ hour on a slow flame.
9. Remove the whole spices and blend the gravy to make a smooth paste.
10. Put 1 tbsp butter, 1 tsp honey and fresh cream, and mix well.
11. To make the paneer kofta, add 1 tsp black pepper powder and ½ tsp chopped fresh coriander to the paneer and mix well.
12. Shape them into balls.
13. Next, flatten the prepared palak mixture and stuff it with the paneer mixture.
14. Lightly coat in corn flour and fry till golden brown.
15. Serve the gravy with the koftas, and enjoy.
