Vikas Khanna Is In Awe Of Chronicler Rushina!
Vikas is the owner of a Michelin-starred restaurant and a celebrity chef himself. We wanted to learn about his favourite chefs in the world. He told us that he adores the legendary chef Sanjeev Kapoor! He also mentioned Ashish Kumar, who is a chef at Vikas’s Dubai restaurant, Kinara. Our guest loves Ashish as he remains grounded and isn’t a double-faced person.
He had another name to add to this list! Vikas talked about a Mumbai-based food researcher, Rushina Munshaw Ghildiyal. She is known to bring forth the simplest ingredients and dishes by reflecting on their history, nature and food creations. To elaborate more on it, Vikas told us that Rushina had a series of ‘Daal Utsav’ to celebrate the delicious pulses.
Vikas shared his final thoughts on food chronicler Rushina by saying, “I just feel that she is understated but so powerful! She is the foundation for many chefs, ideologies and more.” He is completely in awe of the talented Rushina!

Indian Chinese Is The Best
For this Tere Gully Mein, we waited for our food at Chef’s Platter in Bandra East. The conversation shifted to Chinese cuisine in India which is popularly known as Indian Chinese. We wanted to learn Vikas’s thoughts on it. Kamiya mentioned how Indians are crazy about Indian Chinese food. So much so that they think the Chinese food served here is the real Chinese food.

Vikas shared that Indians have altered Chinese food according to their tastebuds. He said, “Humara haath rukhta nahi masale daalne mein!” Hence, Vikas has a special place in his heart for Indian Chinese and calls it a “delicious” cuisine in India.
