Chef Vikas Khanna Shares Recipe For Khapsey, A Himalayan Dish Prepared During Buddhist Festivities

It gives you a deeper understanding of how food is an important part of every celebration and sometimes even the simplest dish can have the most significant role in any festival! Chef Vikas Khanna took to Instagram to share one such simple yet famous dish from the Himalayan region, Khapsey.

Vikas Khanna’s Khapsey Recipe Is An Ode To His Travel In Himalayan Region

Chef Vikas Khanna has travelled extensively around the world to know more about global cuisine. While his expertise lies in Indian food, the renowned chef has a deep appreciation for the food. In his latest post on Instagram, he shared that he has spent a “lot of time in the Himalayas” and has come to appreciate the food of the region. He has travelled a lot to Tibet, Bhutan, and Nepal, and over the years, Khapsey has become one of his “all-time favourite sweets”.

Chef Vikas Khanna shared “During Buddhist festivals, Khapsey are made as sacred offerings”. He further added, “The kitchens would fill with the scent of warm butter and incense as golden shapes—twisted knots, flowers, and half-moons—sizzled gently in oil. It was like poetry unfolding in a pan.”

The chef also mentioned that the Himalayan delicacy would also be served at his famous New York restaurant, Bungalow. It will be part of the menu’s petit fours to mark the final day of Buddha Purnima celebrations.

Here’s The Simple Recipe Shared By The Chef

Chef Vikas Khanna also shared a simple recipe for Khapsey. He said that he learned it in Lhasa.

Ingredients

2 cups all-purpose flour
2 tablespoons unsalted butter (softened)
1/2 cup warm water, or as required
2 tablespoons sugar
Pinch of salt
Vegetable oil or ghee for frying

Method

1. Form a dough with all the ingredients.
2. Then, shape the dough into desired shapes.
3. Finally, fry until golden brown.

And that’s it! Your Khapsey is ready to be served and enjoyed!
