The talented baker, Shivesh Bhatia, brings us one such must-try dessert this summer: Chocolate Ice Cream Mochi.

Whether you wish to try a spicy popsicle or are looking for a sweet yoghurt-based dessert, summer is the time to experiment. This summer, Shivesh has taken his dessert game up a notch with Chocolate Ice Cream Mochi. These tiny chocolatey bites, with the crispy, chewy outer layer and the cold, creamy, indulgent ice cream filling, offer flavours and textures that are a chocolate lover’s dream. And yes, you can easily recreate this recipe at home!

Try This Summer Recipe At Home

Ingredients:

For the mochi dough:

  • ¼ cup glutinous rice flour
  • 1 tbsp cocoa powder
  • 2 tbsp castor sugar
  • 1 tbsp corn flour (plus more for dusting)
  • 1 tbsp butter (melted)
  • ⅓ cup milk

For the filling:

  • Chocolate ice cream

Method:

  1. Take a microwave-safe bowl and add your glutinous rice flour, caster sugar, cornflour, and cocoa powder to it. Mix the dry ingredients evenly.
  2. Take some melted butter and milk and pour them into the dry mixture. Mix it well for a smooth and consistent batter.
  3. Cover the bowl and microwave it for 3 minutes, taking it out after every minute to stir it. Once heated, the batter should thicken and become sticky.
  4. Once it has cooled down to room temperature, refrigerate it for 10-15 minutes.
  5. Dust a clean surface with cornflour and place your dough on the surface. Roll it out into a smooth layer and divide it into 4-5 portions.
  6. Roll each portion into a small ball and flatten them into circles, making sure they are large enough to wrap the ice cream.
  7. Scoop some chocolate ice cream and place it at the centre of each dough circle. Carefully fold the dough over the ice cream and pinch the edges together. For a neat finish, you can trim any excess dough with a knife.
  8. Once you have sealed all the mochi, place them in the freezer for 15 minutes to make sure that the ice cream and the dough are set together.
