Located in the heart of Malcha Marg, this new gem offers a bold fusion of Japanese and Peruvian flavours that is impossible to ignore. Within just a short time since its opening, Boya has become the talk of the town, and rightly so. As you walk through its doors, it’s evident that this isn’t your average dining experience—it’s an elevated journey into the world of luxury fusion food.

From the moment you step inside Boya, you’re enveloped in a space that exudes exclusivity. A glass ceiling adds an extra touch of elegance, especially if you happen to be there during the monsoon. Picture yourself sipping a bowl of warm miso soup while watching raindrops fall softly from above—a perfect setting for a memorable meal.

The ground floor showcases a spectacular bar and an open kitchen, where you can witness the magic happen right before your eyes. The chefs roll sushi, slice sashimi, and cook in a wood-fired oven, all while maintaining an impressive level of precision and artistry. It’s clear from the get-go that Boya offers a complete experience where the senses are treated to visual, auditory, and, of course, taste sensations. The space is led by a passionate team, with Chef Augusto at the helm, bringing years of expertise to every dish.

Let’s talk about the menu, which is nothing short of extraordinary. It’s elaborate in the best way possible—without overwhelming you. Here’s a sneak peek at some of the highlights I had the pleasure of tasting:

Appetisers:

  • Tom Yum Soup

This Thai classic hits all the right notes. Hot and sour with the freshness of lemongrass, galangal, and kaffir lime, it’s the perfect way to start the meal.

  • Miso Shiru

As a die-hard fan of miso soup, I was thrilled by this traditional Japanese offering, featuring rich, umami flavours with wakame, tofu, and spring onions. It was the perfect comfort food, especially on a chilly Delhi afternoon.

  • Steamed Edamame

I’ve had my fair share of edamame, but Boya’s take with chilli oil and flaky sea salt is perfection. Simple, yet refined.

  • Crispy Shiitake

Boya’s crispy shiitake is a standout. It’s crispy, crunchy, and bursting with flavour, making it one of the best dishes on the menu. This one’s a must-try.

  • Dumplings

Boya’s dumplings are a work of art. The exotic mushroom dumplings with gold leaf and activated charcoal were as beautiful as they were delicious. But my personal favourite was the edamame and water chestnut dumplings with truffle oil—a perfect balance of flavours and textures.

  • Fresh Norwegian Salmon In Leche de Tigre With Pomegranate And Toasted Corn

Fresh and vibrant, this dish took me by surprise. The freshness of the Norwegian salmon, paired with the tangy leche de tigre and the crunch of toasted corn, was a perfect combination.

  • Ebi Tempura Roll And Spicy Salmon Roll

Chef Augusto’s signature rolls are not to be missed. The spicy salmon roll, in particular, was packed with flavour, with just the right amount of heat. It’s a roll that speaks for itself.

  • Tofu, Wakame Karaage With Sriracha Aioli

Even though I’m not usually a fan of tofu, this dish completely won me over. The karaage was perfectly crispy and the sriracha aioli added an extra layer of flavour.

  • Filipino Pork Belly In Cane Vinegar, Soy, And Garlic

This was my first time trying Filipino-style pork belly, and it blew me away. Tender, flavourful, and perfectly balanced, it’s a dish that proves Boya’s commitment to using the highest quality ingredients.

  • Spinach, Tofu, Cauliflower, And Bell Peppers In Hot Garlic-Onion With Forbidden Rice

The mains at Boya are nothing short of beautiful. This dish was visually stunning and tasted even better. The forbidden rice was a perfect pairing with the hot garlic-onion sauce.

  • Asian Herb-Crusted Grilled Chicken In Tamarind Glaze With Garlic Rice

This was a highlight of the main course. The grilled chicken was succulent, and the tamarind glaze added a delicious tang. Paired with the aromatic garlic rice, it was a true feast for the senses.
