Celebrity chefs and five-star hotels have set the table to showcase the varied cuisine of India as Delhi gets ready to host the G20 Leaders’ Summit this week. Delhi’s Taj Mahal Hotel will be hosting important officials. Here is all you need to know about the G20 Leaders’ Summit menu.

A few of the unusual dishes being offered include lamb and small millet soup, palm heart, pearl millet and mix mesclun, murgh badam and amaranth korma, millet nargisi kofta, wild rice, and pearl millet mousse.

Chef Arun Sundararaj, director of culinary operations at the Taj Mahal Hotel, New Delhi, stated that they have even brought in a chef who is based in the nation of origin of the group that is staying with them. And they are ready to bring an element of authenticity to the preparations in case they require customization.

People with knowledge of the situation stated that at the ITC Maurya will host US President Joe Biden. And every attempt is being made to accommodate his preferences. In fact, everything he enjoys is being catered to and since he likes peanut butter sandwiches, the family favourites will be offered in that manner. He also likes sweets, and the hotel offers a wide variety of ice creams.

Leaders from around the world will attend the 18th G20 Heads of State and Government Summit. It will be held in India at Bharat Mandapam, Pragati Maidan, on September 9–10. One of the main components of the preparations has been hospitality.

Special Preparations And Millet-Based Cuisine

According to Tarun Thakral, chief operating officer of the Le Meridien hotel, special menus representing the country’s well-known cuisines are being offered at the establishment’s coffee shop.

The VVIPs will have the opportunity to have a millet-based meal at the National Gallery of Modern Art. It will be created by three chefs, including Chef Kunal Kapur, Anahita Dhondy and Ajay Chopra. In fact, the leaders will be served some of the best Indian culinary delights.

Chef Ajay Chopra will finish the multi-course millet medley with a millet thekua and a lemon shrikhand mille-feuille dessert. While Chef Kunal Kapur will prepare a delicious jowar-mushroom khichda.

Chef Dhondy will prepare a raw banana barnyard millet tikki with puffed amaranth.
