Noon has taken its name from the Kashmiri word which means salt. Founder and chef Vanika Choudhary thought of this name because salt is the one primary ingredient that is very important and also because it is the key ingredient in fermentation.

The menu at Noon focuses on seasonal organic produce and also on fermented ingredients. Offerings, a farm near Mumbai is the place from where they source organic produce. Some of the produce is sourced from farmer collectives in Nashik and Mahabaleshwar. Currently, the kitchen has more than 20 ferments in a process that add the most unexpected flavour to your dishes.

The bar is full of drinks that are sugar-free and carbonated being one of the few in Mumbai that offers this. The cocktails here are prepared fermented ingredients that add a very different tinge to the regular cocktails you might have tried.
