Why Is This Fantastic?
Offering culinary excellence at 40,000 feet, the chefs collaborated together to offer a unique menu of dishes that showcased a connection between France and Dubai. Yes, while Chef Jean Michel Bardet was challenged to flavour profiles of dishes that bring out the notes of their exclusive beverage, the Emirates team was managing the issues of scale. Together, they brainstormed ways in which premium restaurant-quality cuisine could be created for an in-flight experience. To give a background, Jean Michel Bardet invents dishes that enhance the flavours of the drink with six fundamental principles. And these are – dialogue, chromaticity, simplicity, saltines, texture, and cooking
