Ingredients:

  1. In a mixing bowl, combine amaranth flour, sendha salt, water, and a bit of oil. Knead the ingredients to form a dough.
  2. Divide the dough into small balls, each weighing approximately 20 grams.
  3. Roll each dough ball into a round shape, similar to a puri.
  4. In a separate pan, heat one litre of oil until it’s hot, and then deep fry the prepared puris until they turn golden brown.

  1. Heat ghee in a pan. Once hot, add cumin seeds, curry leaves, and chopped green chillies. Sauté them until fragrant.
  2. Add the boiled raw banana to the pan and follow it with roasted and crushed peanuts and freshly grated coconut. Season with salt.
  3. Stir the mixture well until all the ingredients are thoroughly combined.

Serve this delightful raw banana vegetable dish alongside the crispy amaranth puri, and you’ll have a Diwali meal that’s both delicious and satisfying.

2. Raw Banana Kebab: A Diwali Delight With A Twist

  1. Begin by boiling the raw bananas until they’re tender. Once cooked, grind them into a smooth paste.
  2. To this banana paste, add cashew powder, green cardamom powder, sendha salt, and roasted chana dal. Mix these ingredients until they form a cohesive mixture.
  3. Shape the mixture into small patties.
  4. In a pan, heat some ghee over medium heat. Place the patties in the pan and cook them until they turn a beautiful golden brown on both sides.
  5. Now, prepare the Malai. Add beetroot paste to the malai. To make the beetroot paste, boil a beetroot and blend it into a smooth paste. Mix this beetroot paste into the malai until well combined.
  6. On a serving plate, garnish with drops of the Malai mixture.
  7. Place the golden-brown patties on the side of the plate.
  8. Enhance the presentation by garnishing with fried curry leaves and some edible flowers.

  1. Begin by roasting the sweet potatoes in an oven preheated to 160°C for 25 minutes.

  3. In a blender, combine the roasted sweet potatoes, sesame seeds, olive oil, and sendha salt.
  4. If you’re preparing yellow sweet potato chips, slice them and fry them until they become crispy.

For the Dry Fruit Thecha:

  1. Mix all the dry fruits together and crush them to your desired texture.
  2. In a pan, melt ghee over medium heat. Add green chillies and sauté them until fragrant. Then, add the crushed dry fruits and mix well.
  3. To assemble:
  4. Take a plate and spread the hummus evenly.
  5. Top the hummus with the mixed dry fruit Thecha.
  6. Garnish your dish with crispy sweet potato chips and edible flowers.
