Nitin Gadkari’s Super Easy Dahi Baingan Recipe
Kamiya and Nitin bonded over delectable cuisines, tasty recipes and Nagpuri barfis. While speaking about his love for food and cooking, he revealed a fantastic recipe for dahi baingan and thecha. Needless to say, we were all ears for it and are sharing it with you as well!
Nitin tried a new dish, dahi baingan or curd brinjal, and completely fell in love with it. He explained it’s making step by step; take a notepad and follow along. Cut brinjal into circular pieces and marinate with some oil, panch phoran and hing. Panch phoran consists of cumin seed (jeera), nigella seed (kalonji), fenugreek seed (methi), wild celery seed (radhuni), and fennel seed (sauf).
Next, take a pan, heat it and add the marinated brinjal. Fry it slightly on both sides; remember to not make it crispy. Now comes the hung curd. Nitin explained that it is crucial to use curd which isn’t completely devoid of its water. To this, add red chilli powder, panch phoran and salt according to taste and mix well.
Add the spiced-up dahi to the pan and cook well. Voila, you have Nitin Gadkari’s special dahi baingan at home!
His In-House Tasty Thecha
After learning a delicious recipe for an easy dahi baingan, we shifted our focus to the favourite condiment of Maharashtrians, thecha. All you need is coriander, green chillies, garlic, khopra (desiccated white flesh of the coconut), lemon juice, sugar and salt.
Crush or chop the first three ingredients into small pieces. Add the rest of the ingredients, according to taste, and mix well. Yes, that’s all you need to do! Enjoy Nitin Gadkari’s special spicy thecha at your home!
