Former MasterChef Contestant Shares Chef Ranveer Brar-Approved Pesto Pasta Recipe; Here’s An Eggless Version To Indulge In

Chef Natasha Gandhi is one of our favourite MasterChef India Season 6 chefs. Walking down her memory lane, she shared a pesto pasta recipe that she cooked in the show years back.

Chef Natasha used a special trick to prepare pasta from scratch. From making pasta to delish pesto, she did it all. Chef Ranveer was so impressed that he called it his favourite dish from that day.

Well, Chef Natasha used eggs to make pasta in the episode. But, she has an eggless version too. From ingredients to steps followed in cooking, continue reading to know everything about preparing pesto pasta at home.

Here’s The Recipe To Cook This Delicacy At Home

Ingredients:

To make pasta:

  • 2 cups all-purpose flour
  • 1/4 cup semolina
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • Water (if needed)

To make pesto:

  • 8–10 garlic cloves
  • 4 tbsp hazelnuts
  • Salt
  • 1 cup basil leaves
  • 2 tbsp parmesan cheese
  • 1/4 cup olive oil

Here’s the method to make pasta at home:

  • Start making fresh pasta at home by kneading fresh dough using flour, semolina, olive oil, salt, and water (if necessary).
  • Once done, cover it and keep it aside for half an hour.
  • Next, make a small dough ball and use a pasta machine on its fourth setting to get a thin sheet. Fold it and roll it again on its second setting.
  • Put a few basil leaves on the dough sheet, fold again, and pass through the pasta machine.
  • Once done, cut into pasta-like strips.
  • In a pot of boiling water, add homemade fresh pasta and cook till they start floating.
  • Next, pour boiled pasta into a bowl of cold water for a minute.
  • To make delicious pesto, crush garlic cloves, hazelnuts, and a pinch of salt in a mortar and pestle.
  • Mix for some time and add basil leaves, parmesan cheese, and olive oil. Crush all ingredients till you get a smooth texture.
  • To serve pesto pasta, transfer pasta to a bowl. Then, add a portion of pesto and 4 tbsp pasta water on it.
  • Gently stir and garnish mouth-watering pesto pasta with grated parmesan cheese.
