All About Fireback’s Chefs And Their Vision

To begin with, let’s first understand why the restaurant is named Fireback. The restaurant draws its name from Thailand’s national bird, the Siamese Fireback. The legendary Chef David Thompson, renowned for his expertise in Thai cuisine, is the Culinary Director of Fireback. He has curated an extensive menu for Mumbai and is eagerly hoping that Fireback soars high in the city.

Rohit Khatter, the founder of EHV International, shared his vision for the restaurant. He expresses full faith and trust in Chef David Thompson, who has extensively trained and led a highly experienced team of chefs. Renowned mixologist Varun Sharma, with years of experience, has also curated an exceptional cocktail list for diners in Mumbai. Also, Kevin Rodrigus, the Head of Wines, has curated a special wine selection. It features flavourful, aromatic, and fruit-forward wines that pair perfectly with the fiery Thai dishes.

To begin your dining experience, kick off with their Thai-style herb salad, Mushroom Lab or Pineapple Salad, which offers a sweet and tangy flavour. The restaurant’s menu leans towards seafood dishes, with must-try options like the Banana Leaf-Wrapped Sea Bass and the Thai-style grilled Lamb Chop Gorlae, which is smoky, juicy, and bold.

Looking for something plant-forward? They’ve got you covered with their Pumpkin and Sweet Potato, which are fire-grilled and glazed in gorlae sauce. For larger plates, their signature items include the spicy Massaman Curry or Jungle Curry of Grilled Pork, made with their in-house chilli paste that’s sure to set your taste buds ablaze. Other must-try options include Red Curry with Soft-Shell Crab and the indulgent Crab Fried Rice, perfect for a complete Thai cuisine experience.
