One popular legend traces the brownie’s beginnings to the Palmer House Hotel in Chicago around 1893. Bertha Palmer, the wife of the hotel’s owner, allegedly requested a dessert that could be easily packed into boxed lunches for ladies attending the Chicago World’s Columbian Exposition. This led to the creation of a dense, fudgy chocolate bar that we now recognise as the brownie.

Another account suggests that a chef in Bangor, Maine, forgot to add baking powder to a chocolate cake batch, resulting in a dense, gooey creation—the first brownie. Regardless of its precise origin, the brownie quickly gained popularity across the United States, becoming a staple dessert in American baking.

As time went on, brownies became a cultural icon, associated with comfort, indulgence, and a quick-to-make dessert. They have also seen a surge in creativity with the addition of various fillings like cheesecake swirls, cookie dough, nuts, candies, or marshmallows, creating layered or stuffed brownie variations.

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
  2. Melt the butter in a saucepan over low heat or in the microwave. Once melted, remove from heat and stir in the sugar until well combined.
  3. In a separate bowl, beat the eggs and then add them to the butter-sugar mixture, stirring until incorporated.
  4. Stir in the cocoa powder, vanilla extract, and salt until the mixture is smooth.

  6. If desired, fold in the chocolate chips or nuts into the batter.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the centre comes out with a few moist crumbs. Remember, baking time may vary based on your oven, so keep an eye on them.
  9. Once baked, remove the brownies from the oven and allow them to cool completely in the pan before slicing them into squares.
