The No Bake Christmas Cheesecake is a delightful dessert perfect for the festive season. Here’s a detailed explanation of the recipe:

Ingredients:

  • 1 litre milk
  • 70 grams custard powder
  • 400 grams whipped cream
  • 400 grams mascarpone cheese
  • 30 grams gelatine
  • 50 grams sugar
  • 300 grams soaked fruits (presumably in rum or any preferred liquid)
  • 300 grams crushed biscuits
  • 70 grams butter

Method:

1. Prepare the base:
  • Crush the biscuits until they form fine crumbs.
  • Mix the crushed biscuits with softened butter until well combined. This mixture will act as the base of the cheesecake.
  • Press the biscuit-butter mixture firmly into a mould or cake ring to create the base. Ensure it’s evenly spread and compacted.
2. Prepare the cheesecake filling:
  • Bloom the gelatine by dissolving it in water and setting it aside.
  • In a separate bowl, whip together the mascarpone cheese and whipped cream until well combined and fluffy. Set this mixture aside.
3. Make the custard mixture:
  • In a saucepan, boil the milk and sugar together.
  • Once it starts boiling, add the custard powder dissolved in a little milk (to avoid lumps) and continuously whisk until the mixture thickens.
  • Once thickened, remove it from the heat and add the bloomed gelatine to the custard mixture. Whisk thoroughly and let it cool down.
4. Combine and set the cheesecake:
  • Once the custard mixture has cooled down, gently fold it into the whipped cream and mascarpone mixture. Ensure it’s mixed thoroughly but gently.
  • Add the soaked fruits to this combined mixture, distributing them evenly.
  • Pour this cheesecake batter onto the prepared biscuit base in the mould or cake ring.
5. Chill and serve:
  • Allow the cheesecake to set in the refrigerator overnight or for several hours until it firms up properly.
  • The next day, carefully remove the cake from the mould or cake ring, cut it into slices, and serve.
