With a rich and diverse culinary tradition, the food of Meghalaya reflects its unique geography, history, and culture. And yes, if you want to take a bite of this experience, head to The Meghalaya Kitchen pop-up happening at The Park in Connaught Place, Delhi NCR.

Pop-Up From The East

Food from the northeast is always brimming with flavours. And in order to showcase the diversity of India’s northeastern region to the rest of the world by transforming local foods into gourmet delights, Tanisha Phanbuh of Tribal Gourmet is hosting a pop-up at the capital, The Meghalaya Kitchen.

The use of local spices and herbs, along with traditional cooking techniques, makes Meghalaya cuisine unique and special.  The tribal influence is evident in the use of indigenous ingredients, such as bamboo shoots and fermented soybeans, and cooking techniques like smoking and roasting. The state is home to a wide range of aromatic herbs and spices, which are used to add unique flavours to the dishes. Most of the dishes are even slow-cooked with local herbs and spices, which impart a rich and smoky flavour to the dishes.

Unlike other cuisines, northeastern food is a combination of mild and spicy flavours. They employ fresh flavoursome ingredients such as bamboo shoots, bhut jolokia, and diverse regional greens to produce more fascinating and lip-smacking delectables.

Phanbuh, who hails from Shillong, is a food connoisseur with a deep interest in the cuisines of the northeast. She was on Masterchef India season six. Tribal Gourmet, her culinary business, acts as a forum for knowledge about northeast delicacies on Instagram (@tribalgourmet). She also arranges pop-ups at restaurants throughout Delhi under this name.

What To Expect?

Rightfully called The Meghalaya Kitchen, the pop-up features umami-rich dishes from the northeastern state. Phanbuh conceptualised the menu in order to bring northeastern delicacies to the forefront and spark conversation. She believes the food from there can make it a mainstream gourmet treat for all.

This pop-up hosted at The Park will include traditional and gourmet dishes like tomato fish curry with perilla, doh jem & shana kulai, an assortment of chutneys with potatoes, and ja bowl to name a few.
