We recently got to know about the rarest pasta in the world, Su Filindeu. This dish is rare and it’s so difficult to make that only a handful of people in the world can make it right. All You Need To Know About Su Filindeu Pasta From Italy
Su Filindeu is believed to be the rarest type of pasta in the world and you will only find it in the Sardinia island of Italy. A traditional, family recipe, the art of making this pasta is so difficult that for more than 300 years, only the women of a single Sardinian family knew how to make this pasta.
As per a BBC report, this pasta is made by a family from the Nuoro region of Sardinia. This unique pasta is made by pulling and folding the semolina dough into very thin threads. It is then laid in three layers on a tray called a fundu and dried to form textile-like sheets. Once dried, the sheets are then broken into smaller pieces and served in a mutton broth with pecorino sardo cheese.
In English, Su Filindeu means ‘threads of God’ and making this pasta is quite a tedious task. It is so difficult that Celebrity chefs like Jamie Oliver have even failed to recreate this rare pasta.

How Is This Rare Pasta Made?
Now, to give you an overview, Su Filindeu pasta is made using semolina, water, and a little bit of salt. After these ingredients are brought together to form a dough, it is then folded and stretched repeatedly to get hair thin, multiple layers of pasta.
As per an NDTV report, the process is repeated till 256 even strands are achieved. Then, these layers are stretched diagonally across a circular frame in an intricate three-layer pattern. Once dried and broken, the pasta is ready to be served and enjoyed.
