Here’s how you can recreate Chef Saloni’s healthy hot chocolate at home:

Instructions:

  1. Begin by heating 2 teaspoons of ghee in a saucepan. Once the ghee is warm, add 2 tablespoons of ragi flour and sauté. Stir constantly until the ragi loses its raw smell.
  2. Gradually add 1/2 cup of water to the ragi, stirring constantly. Once the water is fully incorporated, let the mixture simmer for a couple of minutes.
  3. Next, stir in 2 tablespoons of cocoa powder. 
  4. Slowly pour in 1 cup of almond milk while stirring continuously. Bring the mixture to a gentle boil, allowing it to thicken slightly. 
  5. Add a pinch of sea salt, a splash of vanilla extract (if you like), and 2 tablespoons of jaggery. Stir until the jaggery is fully dissolved. 
  6.  Finally, turn off the heat and stir in 3/4 cup of 70% dark chocolate.
  7. Pour the hot chocolate into your favourite mug, and garnish with chocolate shavings and a cinnamon stick if you like.
