When India’s most famous chef is in our midst, we couldn’t let him go without asking him to share a few cooking tips with us. The Namak Shamak chef kindly shared a few dosa tips, which homecooks will find very useful.

While on a food trail with Chef Harpal Singh, we asked him to share a few hacks to ensure our dosa doesn’t stick to the pan while preparing it at home. Even if it’s a non-stick pan, many a time, preparing dosas can be a delicious hassle. To put our minds at ease, Harpal Singh shared one tip everyone must keep in mind.

“Tawe ka temperature bahut important hai (The temperature of the tawa is very important).” There are times when preparing dosa, the batter sticks to the ladle. Chef Harpal indicates that this means the pan has been overheated. First, the pan needs to be heated. Next, water needs to be sprinkled on the pan and wiped with a piece of cloth. Oil needs to be evenly spread on the hot pan with a tissue paper.

How To Get The Temperature Of The Pan Right

The key is to get the temperature just right, so when you pour the batter, you can spread it easily. The sizzle in the hot pan after you sprinkle water indicates it’s the perfect time to pour the batter. Another way to ensure the batter doesn’t stick to the pan or the ladle is to use an onion. Slice an onion in half, dip it in oil and rub it across the pan. This way, the temperature is set to perfection.
