Hyderabad’s fine dining and nightlife scene has a lively new addition with the launch of Vayu. This rooftop resto-bar highlights the richness of regional Indian cuisine while offering an immersive social experience. Want to know more about this? Read on!
Vayu Brings Regional Indian Cuisine To Hyderabad
Located on the rooftop of the hotel building, Vayu is more than just a restaurant. It’s a spot where food, cocktails, music and conversations come together perfectly. Designed for well-travelled, experience-seeking guests. The restaurant’s setting reflects Hyderabad’s dynamic social culture, where enjoyable evenings are defined as much by the atmosphere as by what’s offered on the table.
Named after the Sanskrit word for “wind”, Vayu draws inspiration from the intangible force that moved across India’s mountains and coastlines and plains long before modern highways were built. This idea of flow and discovery forms the foundation of the restaurant’s identity.
The rooftop space blends contemporary architecture with layered interiors, offering intimate seating corners, communal tables and an inviting bar that easily transitions from relaxed daytime dining to lively evenings. Whether it’s an after-work catch-up, a weekend celebration or a long dinner with friends, Vayu has been designed to suit every occasion.
A Menu Inspired By India’s Diverse Culinary Landscape
At the heart of Vayu is a set menu that takes diners on a journey across India’s diverse culinary landscape. The kitchen highlights dishes shaped by local ingredients, age-old culinary traditions and bold flavour profiles that mark Indian cuisine today.
The small plates showcase flavours from across the country. Shrimp Pickle with Masala Brioche revisits a classic coastal preserve in a contemporary format, while Chicken Wings Vepudu pays homage to Andhra’s fiery flavours. Steamed Kalimpong Momos draw on Himalayan influences, and Jeedipappu Pakoda celebrates South Indian comfort food with a contemporary touch.
The main course menu travels through five distinct culinary traditions, featuring Andhra’s Gongura Mamsaam, Karnataka’s Kundapur Ghee Roast, Kerala’s Meen Pollichattu, Maharashtra’s Kolhapuri Mutton Sukka, and the timeless Butter Chicken from Delhi. Together, these dishes represent the diversity and depth of India’s culinary heritage under one roof.
Vayu’s Signature Cocktail Programme Tells A Unique Story
The storytelling goes on behind the bar through The Paper Plane’s Logbook, Vayu’s signature cocktail programme. Influenced by the journey of a paper plane flying into unknown destinations. Every cocktail draws from a different corner of India, making use of regional ingredients and nostalgic flavours to tell a distinctive story.
Among the unique creations is Crimson Wind, which combines gongura with tequila and salted agave. While Kokum Cloud blends gin, kokum and passionfruit into a delectable cocktail. Firestorm Ember combines ginger-infused tequila with fermented chilli agave for a bold and spicy finish. Each drink is created to lead guests through taste, celebrating the memories and ingredients along the way.
“Vayu has been envisioned as a social destination that reflects the energy of Hyderabad today,” says Mr Amardeep Singh, Multi-Property General Manager, Hyderabad Marriott Hotel & Convention Centre and Courtyard by Marriott Hyderabad. “The focus has been on building a strong cocktail programme alongside a menu that celebrates regional Indian flavours, creating a space where guests can spend an entire evening embracing the cosmopolitan spirit of Hyderabad.”
