Ingredients:
- Britannia Bourbon biscuits, 200g crushed
- 150 g of unsalted, softened butter
- 150 g of dark brown sugar
- Three large eggs
- One tsp of vanilla extract
- 200 g of all-purpose flour
- One tsp of baking powder
- 1/2 tsp of ground cinnamon
- 1/4 tsp of ground nutmeg
- 1/4 tsp of ground cloves
- 150g of mixed dried fruits, including currants, sultanas, and raisins
- 75 g of chopped pecans or walnuts
- 50 g of finely chopped glacé cherries
- Two tbsp of orange juice or brandy (for soaking fruits)
- One orange’s zest
Method:
- Soak dried fruits and cherries in brandy/orange juice for at least 2 hours or overnight.
- Preheat oven to 150°C (300°F). Grease and line an 8-inch round tin.
- Cream butter and brown sugar until fluffy, then beat in eggs one by one. Add vanilla with the last egg.
- Whisk flour, baking powder, and spices together. Add to the wet mixture and mix gently.
- Fold in soaked fruits (drain excess liquid), nuts, orange zest, and crushed Bourbon biscuits.
- Transfer batter to the tin and level the top.
- Bake for 1.5–2 hours, covering with foil if it browns too fast.
- Cool for 15 minutes in the tin, then on a rack.
- Wrap tightly in parchment and foil once cooled. Enjoy immediately or mature by feeding with a little brandy weekly.
