A basic Bengali meal starts with a ‘Shukto,’ which is a bitter preparation and is followed by a leafy vegetable mix ‘Shak.’ Then comes Dal, a mixed variety of vegetables or ‘sabzi’ and the most important, pieces of lemon. For a non-vegetarian meal, there will be added items like fish/mutton/chicken/egg curry or dry fish ‘chutney’. The meal ends with a sweet dish, mostly mishti doi which is sweet curd and other traditional Bengali sweets like Sandesh or rosogolla.
