“You haven’t tried Goli Soda? Wait, let me show you my childhood favourite drink,” said my dad excitedly when we visited a coastal restaurant that prides itself on its Mangalorean fare. That was my first introduction to Goli Soda AKA Banta Soda, a lemony drink with a signature “pop” sound. Lemon, marble and “po”p, that’s what goes into making Banta Soda a beloved summer cooler. Chef Avinash Martins (Cavatina and Table In The Hills) reminiscenced his childhood favourite summer drink.
Chef Avinash Martins Takes Us Through Banta Soda Preparations In Goa
Chef Avinash Martins took to his Insta handle to share a heartwarming reel of himself interacting with a Banta Soda vendor in Goa. “All of you have had fresh lime soda, but this place does it a bit differently as it serves Banta Soda,” says Martins showing a shiny bottle of lemony soda encased with a marble. The video shows a vendor slicing lemons to prepare this fizzy drink. The chef mentions the importance of hydrating oneself amid the sweltering summer heat.

Furthermore, Martins stated that Shinkaji, lemonade or fresh lime soda is very important for people in Goa. The Banta Soda took the popular Goan chef to his childhood days when he’d feel excited to see the soda “pop”. The chef got an exclusive look behind the scenes at how the apparatus works. The vendor places the bottles in the carbon dioxide tank and tightens the screws. And due to the pressure, the marbles stayed right atop the glass bottles.

Sustainable Drink Without Plastic Bottles
“Uncle practised sustainability with no plastic bottles,” says Martins as he wraps up his nostalgic reel. His reel garnered heartwarming comments as Netizens walked down memory lane. While some called it Goti Soda, others, Goli Soda, but the feeling and emotions remain the same! An Instagrammer remembered bunking classes just to have this summer cooler.
