Ambrosius Hiltl took over a small Zurich eatery known as the “Vegetarian Home and Abstinence Café. 1898 was a time when the idea of vegetarianism was largely unheard of in Europe. At that time, vegetarianism was viewed as counter-cultural, and the restaurant was often ridiculed. Slowly but surely, the restaurant began to build a loyal customer base, and over the decades, it transformed into a symbol of Zurich’s progressive and health-conscious culinary scene.
The restaurant’s Indian influence is especially prominent, Indian vegetarian cuisine has long been regarded as one of the most flavourful and varied in the world, and Hiltl’s chefs have perfected the art of bringing these spices and flavours to Zurich. In 1951, one of the couple’s son’s wife, Martha attended the World Vegetarian Congress in New Delhi. She was introduced to the vibrant diversity of Indian cuisine. It was a lesson on fresh, seasonal produce, an extensive array of spices, and age-old culinary techniques. Upon returning to Zurich, she delved deeper into Indian cooking, gradually incorporating select dishes, ingredients, and methods into the Hiltl menu. This Indian influence made Hiltl especially popular among Indian travellers, including its most famous patron, former Prime Minister Morarji Desai.
