Here’s How You Can Make This Delectable Dessert Easily At Home

Phirni is one of the most loved desserts and the sweetness infused with coconut, saffron, and pistachios surely is a treat to our taste buds and soul. Here’s how you need to make this recipe by Chef Saloni Kukreja.

Ingredients:

  • 2.5 cups coconut cream
  • 2.5 tbsp short-grained rice
  • 4-5 tbsp sugar
  • A pinch of salt
  • A pinch of saffron
  • A pinch of cardamom powder
  • Pistachios

Method:

  • Wash short-grained rice nicely and soak the washed rice for about 20 minutes.
  • Drain all the excess water and dry the soaked rice by spreading it on a muslin cloth. This step is a must before you start grinding and preparing the rice powder.
  • Take a bowl and add the powder with coconut cream. Stir both the ingredients well and keep it aside for some time.
  • Next, take a pan and add 2 cups of coconut cream to it and a few strands of saffron as well. Stir the milk continuously and cook on a low flame. Continue the process till you see the milk simmering.
  • Then pour the mixture of rice powder and coconut cream into the pan. Once again stir everything well till the consistency becomes thick. Make sure you simmer the flame during this process.
  • It’s time to enhance the taste. For this, add sugar, cardamom powder, and a pinch of salt to the pan. Make sure you stir thoroughly so that sugar granules dissolve completely.
  • Once the phirni has thickened well, take it out of the gas and cool down for about 20 minutes.
  • In between, remember to wash and soak matkas. Transfer the phirni to the matkas and refrigerate for a minimum of 2 hours.
  • Before serving, garnish the dessert with some chopped pistachios.
