Restaurant Style At Home Ep 18: Sindhi Mutton Curry With Celebrity Chef Rakhee Vaswani

Seyal Mutton, a traditional heritage from the Sindhi Community & today we have  Celebrity Chef Rakhee Vaswani, who teaches us a traditional Seyal Mutton recipe to make at home. This traditional recipe has been passed down the generations and requires you to cook the meat slowly until it falls from the bone. You can relish it with Sindhi style doda, roti or rice. Ingredients:

Mutton –  750gms
Oil – 4 tbsp
Bay leaf (Tej patta) – 1
Cinnamon (Dalchini) – 1 inch
Peppercorns (Kali mirch) – 6 to 8
Clove (Laung) – 2
Onion, chopped – 1kg
Garlic, finely chopped – 50gm
Ginger, finely chopped – 50gm
Salt as per taste
Coriander seed powder-2-3 tsp
Red chili powder- 2 tsp
Turmeric – 1 tsp
Green chillies 1-1.5 tsp
Warm water
Tomatoes chopped – 4 large
Spinach leaves – 1/2 cup
Coriander leaves – 3/4 cup
Fenugreek leaves – 1/2 cup
Garam masala – 1 tsp
Coriander for garnish

Recipe Making: 
Step 1: Saute all the dry spices  in the pan with oil
Step 2: Add the onions and let the onions cook till it’s mushy
Step 3: Add the mutton & then add all the dry masalas and mix it well with a cup of water and then cover & let it cook for 10- 15 mins
Step 4: Once the mutton is a slightly cooked add the rest of the ingredients like tomatoes, spinach & fenugreek leaves, mix it well and let it cook for another 15- 20 mins until the. So finally your Seyal Mutton is ready.
