Sindhi Kadhi V/s Punjabi Kadhi V/s Gujarati Kadhi – Which One Is The Best? | Curly Tales

Every region in India has their own style of preparing food dishes. In this video, Team Curly Tales i.e. Kamiya Jani, Bianca Saurastri and Tonakshi Kalra are taking a cook-off challenge wherein they have swapped their recipes of making Kadhi. While Kamiya is getting her hands on making Gujarati Kadhi for the first time, Tonakshi and Bianca struggle their way to make Sindhi and Punjabi Kadhi. Punjabi Kadhi Recipe:
Make a mixture of curd (360 gms) and besan (55gms gram flour)
In a large and deep pan, add 2 tablespoons of mustard oil on medium-high heat. You can use any oil but mustard oil gives it a nice flavor. Add mustard seeds, cumin, fenugreek seeds, red chilly, curry leaves, cinnamon, cloves, asafetida (heeng), some chopped onions, star
Stir it well 
Add ginger garlic paste
Stir and make it brown
Add a pinch of Coriander powder, red chilly and turmeric
1 tsp ginger garlic paste 
1 tbsp water 
After a while, add the curd besan mixture to it 
Boil it and then add some salt as per taste 
Leave the kadhi to boil for 20 minutes and make pakodas 
Pakodas making: 2 cups spinach
Add some chopped onions, green chillies, coriander, red chilly powder, turmeric, table salt, some curd,1 cup besan and half cup water
Now mix it well with hands 
Make tiny balls of the mixture and fry them 
After frying the balls, mix them into the main kadhi vessel with the other mixture 
Stir it well and now take red chilly powder with oil and sizzle it 
Then add the sizzled flavour to the Kadhi as a topping 
Punjabi Kadhi is ready to eat! 
 
Sindhi Kadhi Recipe: 
Take an aluminum vessel
Add 2 ladle spoon Oil 
1 tsp Fenugreek seeds and 1 tsp Mustard seeds 
1 tsp cumin
Stir it and add 2 ladle spoon besan (gram flour) 
Keep stirring it till the mixture becomes thick and smooth (till it becomes dark yellow, not brown)
Add 2 litres of water (same quantity as Besan)
Salt as per taste 
1/2 tbsp Turmeric powder 
10-15 Curry Leaves
After stirring it well, add 1 big chunk of Ginger (can be taken out after the Kadhi is made)
A pinch of Asafetida (Heeng)
Veggies like Potato, Drumsticks, Lauki (Calabash) as it is
Red chilly powder (optional)  
Saute veggies like Ladyfinger, Brinjal and Cluster Beans 
Saute them well in other pan 
Add 2 Tomato puree in the main kadhi vessel and give it a boil 
Add the fried/saute veggies to the mixture and give it a boil again 
2 tbsp Tamarind puree 
Boil it all for 30 minutes   
Sindhi Kadhi is ready to eat! 
 
Gujarati Kadhi Recipe:
Take a bowl and combine the curd (250gms) and besan (1 tbsp) in it 
Add a glass of water and mix it well 
Some salt as per taste
Some jaggery (gudd) or sugar to it 
Ginger garlic paste 
Blend it well 
Heat the ghee in Kadhai vessel and add Cumin, Fenugreek seeds and Mustard seeds to it 
Now add the bowl mixture to it and add Curry Leaves 
Simmer it for 10-12 minutes 
Garnish it with some coriander leaves 
Gujarati Kadhi is ready to eat!
