1. Badami Chandni Kebab

A melt-in-the-mouth kebab packed with protein from paneer, almonds, and hung curd, this recipe by Pankaj Bhadouria is a great option for a healthy yet indulgent snack.

Ingredients:

  • 200 g hung curd
  • 200 g paneer
  • 100 g almond paste
  • 25 g roasted chana powder
  • 2 slices white bread
  • 1 tsp. white pepper powder
  • ¼ tsp. mace powder
  • 1 tsp. cardamom powder
  • 1 tsp. chopped coriander
  • 1 tsp. chopped green chillies
  • 1 tsp. kewra water
  • 2 tbsp. chopped dried apricots (soaked)
  • 25 g corn flour
  • Flour for dusting
  • Oil for shallow frying
  • Almonds for garnish
  • Green chutney & onion laccha to serve

Method:

  1. Mash the paneer until it reaches a soft, dough-like consistency.
  2. In a bowl, mix the mashed paneer with hung curd, almond paste, roasted chana powder, white pepper, mace powder, cardamom powder, coriander, green chillies, kewra water, and chopped dried apricots.
  3. If the mixture feels too sticky, add an extra 1-2 tsp of roasted gram flour to bind it properly.
  4. Shape the mixture into round patties, dust lightly with flour, and press an almond on top for garnish.
  5. Heat oil in a pan and shallow fry the kebabs over medium heat until golden brown on both sides.
  6. Serve hot with mint chutney and onion laccha.

2. Almond Soya Kathi Roll

A perfect combination of plant-based protein and robust flavours, this kathi roll is a fantastic option for a satisfying snack.

Ingredients:

  • 1 cup chopped toasted almonds
  • 1 cup soya granules (boiled in 4 cups water with 1 tbsp light soy sauce & 1 tbsp ginger-garlic paste, then drained and squeezed)
  • ½ cup boiled mashed potatoes
  • 1 tbsp. ginger-garlic paste
  • 3 tbsp. corn flour
  • 3 tbsp. fresh breadcrumbs
  • 2 tbsp. chopped mint leaves
  • 2 tbsp. chopped coriander leaves
  • 1 tsp. soy sauce
  • 1 tsp. chopped green chillies
  • 2 tsp. lemon juice
  • 1 tsp. chaat masala
  • 2 tsp. roasted jeera powder
  • 1 tbsp. garam masala
  • 1 tsp. pepper powder
  • 1 tbsp. amchur
  • ½ tbsp. clove + cardamom powder
  • 1 tsp. red chilli powder
  • Salt to taste
  • 6 parathas for kathi roll
  • Green chutney & onion laccha to serve

Method:

  1. Grind the boiled soya granules into a coarse paste using a mixer.
  2. Add the toasted almonds, mashed potatoes, ginger-garlic paste, corn flour, breadcrumbs, and all the spices. Mix well to form a kebab mixture.
  3. Shape the mixture into kebabs and skewer them evenly.
  4. Grill the kebabs on a grill pan until they are golden brown and slightly charred.
  5. Take a fresh paratha, spread a generous layer of green chutney, and place the prepared kebab in the centre.
  6. Roll tightly and secure with a toothpick.
  7. Serve immediately with green chutney and onion laccha.

3. Badami Mushroom Galaouti Kebab

A vegetarian twist on the famous Galouti Kebab, this soft, flavourful delight uses mushrooms and almonds to provide a protein-rich experience.

Ingredients:

  • 400 g boiled mushrooms
  • ½ cup almonds
  • 1 cup fried onions
  • Salt to taste
  • 1 tsp. red chilli powder
  • ½ tsp. garam masala powder
  • ½ tsp. cardamom powder
  • 1 tbsp. coriander seeds
  • ½ tsp. fennel seeds
  • ½ tsp. cumin seeds
  • ½ tsp. kewra water
  • 3 tbsp. roasted besan
  • 3 tbsp. desi ghee
  • Green chutney & onion laccha to serve

Method:

  1. Blend the boiled mushrooms into a fine paste.
  2. Lightly roast coriander seeds, fennel seeds, and cumin seeds. Grind them into a fine powder and sift.
  3. Toast the almonds in 1 tsp ghee until golden brown, then blend with fried onions and 1 tbsp water to form a smooth paste.
  4. Mix the mushroom paste with the almond mixture, ground spice powder, roasted besan, garam masala, chilli powder, cardamom powder, and kewra water.
  5. Shape the mixture into small kebabs.
  6. Cook the kebabs in desi ghee until they are crispy on both sides.
  7. Serve with green chutney and onion laccha.
