But here’s where it gets really exciting—what if I told you that in 2024, the Michelin Guide awarded a star to something you might never expect: an ice cream shop? Yes, you read that right. MINIMAL, an ice cream shop in Taichung, Taiwan, made history as the first and only ice cream parlour in the world to receive a Michelin star.
Taiwan’s MINIMAL Takes Ice Cream To Michelin Heights
The 2024 MICHELIN Guide Taiwan promoted MINIMAL from its initial Bib Gourmand recognition to the highly coveted Michelin star. It certainly marked a monumental moment in the world of fine dining. As indicated from this prestigious recognition, MINIMAL is far from your average ice cream shop. Founded by Chef Arwin Wan, this place is all about reimagining the ice cream experience.
The ice cream here is far from the basic version we are familiar with. It is about layers of texture, temperature changes, and the unadulterated flavour. The name ‘MINIMAL’ reflects the philosophy behind it—simplicity and purity. It’s a perfect balance of minimal elements that create something magnificent.
Chef Wan previously worked as the pastry chef at Sur, a Michelin-starred restaurant. At MINIMAL, he wished to capture the feeling of childhood wonder when tasting ice cream for the first time. Using local Taiwanese ingredients, he crafts ice creams that are works of art that present new textures, delicate flavours, and even techniques like nitro-style ice cream.
Ice Cream Like You’ve Never Imagined
At MINIMAL, the tasting menu offers seven runs—each exploring different textures and frozen dishes. From sorbets to ice creams with intricate temperature shifts, each course leaves you with a different sensation and a sense of joy. From delicate slushies to nitro-style frozen treats, the menu takes ice cream far beyond your expectations.
MINIMAL operates out of a two-story venue in Taichung. On the first floor, you’ll find a traditional takeaway ice cream shop. On the second floor, you’ll find an intimate dining space with just 20 seats. Here, guests can fully immerse themselves in the tasting menu
In 2023, MINIMAL received a Bib Gourmand recognition from Michelin, a sign that this was no ordinary ice cream shop. But in 2024, the unthinkable happened—MINIMAL was promoted to one Michelin star.
