This BTS Video Of Gujarat’s Favourite Mithai, Mohanthal Has Foodies Salivating

When you think of Gujarati snacks and sweets which are the first to come to mind? It’s jalebis, fafda and thepla right? Well, did you know that Gujarat also has an underrated sweet that’s yet to fully come to limelight. And that’s Mohanthal, a fudgy mithai made of besan, ghee and sugar. One viral video doing the rounds on the Internet shows the making of Gujarat’s favourite mohanthal. Check it out!

Food vlogger, Amar Sirohi AKA @foodie_incarnate took to his Instagram handle to share a mouth-watering video of cooks in Gujarat preparing large quantities of mohanthal, the state’s beloved sweet. A fudgy desi mithai with besan, sugar and ghee as the base, it’s often flavoured with saffron, mace and cardamom. And then garnished with nuts.

In the video, Amar Sirohi  states that people often talk about the farsan in Gujarat. Due to this, the state’s sweets remain hidden. He recommends foodies definitely try mohanthal. For the best mohanthal, he suggests people visit Surat’s Shah Jamnadas C Ghariwala. Then, the video goes on to show the making of mohanthal.

First, the cooks sift besan flour. Next, they pour hot desi ghee into it. After adding almost a pool of ghee into the middle a mound of besan, little milk is added. Then, the milk, ghee and besan are mixed well. Once again, the mixture is passed through a massive seive to avoid the formation of lumps.

Next, the cooks prepare chashni or sugar water. First, they pour water into a vessel and heat it over a flame. And then, add sugar. It takes 10 to 15 minutes for the chashni to be ready. Once the chashni is ready, it’s kept ready. In another massive vessel, the cooks add ghee and once it’s hot, the sifted besan-ghee-milk mixture goes into it. The besan mixture and ghee are mixed very well over the flame for at least 20 minutes.

Slowly, you can spot the fudgy texture of the dessert. Finally, the hot chashni is added to the liquid gold, besan. Finally the golden coloured liquid fudge is poured over a flat thaal for cooling. Once it’s cooled down, the cooks slice them into small pieces.
